Based in Earl Stonham Ichiban UK are Europe's biggest sushi manufacturer. Employing over 400 people, Ichiban deliver some 500,000 packs of sushi a week to major grocery retailers. Ichiban prepare their sushi according to traditional Japanese methods on one of the UK's most advanced production lines in their sector.
Dan was able to meet Managing Director Andrew Wilkinson who briefed him about the company and took him on a tour of the factory. Dan was able to meet some of the skilled people who help create Ichiban's sushi.
One fact Dan did learn, it is a popular misconception that sushi is raw fish, it is in fact the vinegar-flavoured cold rice.
